Avocado, Prawn and Mango Salad

This is a light and healthy salad and who doesn’t love prawns, avocado and fresh juicy mangos?

Ingredients

20 cooked, peeled and deveined prawns

Cubed flesh from 2 avocados

Cubed flesh from 2 mangos

4 large handfuls of mixed lettuce leaves

Thinly sliced ½ a red onion

1 large handful of chopped coriander leaves

1 finely chopped long red chilli (optional)

Salad Dressing

1tbsp honey (you can use less if you prefer)

1/2tbsp wholegrain mustard

6tbsp extra virgin olive oil

2tbsp white balsamic vinegar (can be substitute apple cider vinegar if preferred)

Instructions

  1. Arrange lettuce, onion, mango, avocado and prawns in a large bowl or on a serving platter.
  2. Place all the dressing ingredients in a screw-top jar or a container with a secure lid and shake well until thoroughly combined. Season to taste and pour over salad.
  3. Sprinkle salad with chilli and coriander leaves, serve and enjoy.
