Easy Yoghurt and Banana Cake

Who doesn’t love banana cake? This recipe is simple and is a healthy twist on a much-loved classic.

Ingredients

1 cup brown sugar

1 cup low-fat Greek yoghurt

150g Flora with Butter

1 1/2 cups ripe mashed banana

3 eggs

3 cups self-raising flour

1tsp vanilla bean paste

1/4tsp bicarbonate of soda

Sliced banana and chopped walnuts to decorate

Icing

½ cup low-fat Greek yoghurt

¼ cup caster sugar

250g light cream cheese

Instructions

  1. Preheat oven to 180°C or 160°C fan forced. Grease and line a square 19 cm, 7 cm deep cake pan with two layers of baking paper.
  2. With an electric mixer, beat the vanilla, sugar and margarine until light and fluffy, for approximately 3 to 5 minutes. Gradually add the eggs one at a time and continue beating until combined. Mix in bicarbonate of soda, sifted flour, yoghurt and banana and spoon into prepared pan. Using a spatula, level the top.
  3. Bake for an hour or until a skewer inserted into the centre of the cake comes out clean. Leave cake to stand for ten minutes before turning onto a wire rack to cool.
  4. To make the icing, use an electric mixer to beat the sugar and cheese until light and fluffy. Fold in yoghurt and spread icing over the top of the cake. Decorate with walnuts and banana slices.
