Lentil and Spinach Soup

This lentil and spinach soup is healthy, tasty and super easy to make.

Ingredients

2 peeled and diced carrots

2 diced celery stalks

1 small diced onion

3 cloves minced garlic

2tbsp extra virgin olive oil

2tsp cumin

300g lentils

1tsp coriander

2tsp fresh thyme

400ml can diced tomatoes plus juices

1/4tsp crushed red pepper flakes

4 cups vegetable broth

4 cups baby spinach

Instructions

  1. Heat olive oil in a large pot over a medium high heat and add carrots, onion and celery. Cook for five minutes until beginning to soften and add cumin, garlic, red pepper flakes and coriander. Cook for a further one minute, stirring continuously before seasoning with salt and pepper.
  2. Add vegetable broth, tomatoes, thyme and lentils and bring to boil the boil before reducing heat and partially covering. Simmer for approximately 20 minutes until lentils are tender and soup is thickened. If soup becomes too thick add another half a cup of water.
  3. Stir in spinach and cook for two minutes until wilted. Check seasoning, serve and enjoy.
