Pea Pancakes

Quick and simple to make, these healthy pancakes taste great!

Ingredients

3 large eggs

1 cup of fresh or frozen peas

¼ cup all-purpose flour

4 thinly sliced scallions, plus more for serving

1tsp salt

2tbsp vegetable oil plus a little extra for your skillet

¼ cup melted butter

1 cup low-fat cottage cheese

Instructions

  1. Cook fresh peas until tender, drain and set aside. There is no need to cook frozen peas.
  2. In a blender purée the flour, oil, salt, cottage cheese and eggs until smooth. Transfer to a bowl and stir in peas and scallions. Your batter should be pourable, so add a little water if needed.
  3. Lightly oil a large non-stick skillet and heat over medium heat. Add mixture to skillet in ¼ cups, spreading out each batch to form 7-10cm rounds. Cook until bubbles begin to develop on the top, for approximately three minutes. Turn over the pancake and continue to cook until browned and cooked through, for about two minutes longer. Serve with extra scallions.
